Quick and tasty and a good way to get your kids to eat some almonds. These cookies are called Amaretti and they are typical from both Sicily and Sardinia.
Take 200 g ground almonds and 200 g sugar. Mix together. add some lemon rind or a tsps of cinnamon.
Fluff up 2 egg whites and add to almond mix.
Make into small balls, add an almond on the top and bake for 15-20 mins on 150 until golden. Watch them though as they burn easily.
Rita is not just a great cook but she also runs Yoga and cooking breaks for mums and babies/toddlers in Italy. Brilliant!
