THE AUTHOR: Karen Le Billon is a professor at the University of British Columbia, and was named one of Canada’s Top 40 Under 40 in 2011. A Rhodes Scholar with a DPhil from Oxford, she has published three scholarly books. She is also a Jamie Oliver Foundation Real Food Advocate.
