Another Great British Chefs recipe: Marcus Wareing’s Cheesy carrot bake. Yum yum!
Serves 4
Cooking Time: 45 minutes
INGREDIENTS
225g carrots, grated
1/2 tsp salt
50ml vegetable stock
1/2 onion, finely chopped
20g cheddar, grated
10g coriander, chopped
1 egg
1 tsp olive oil
1 pinch pepper
METHOD
1. Preheat the oven to 180°C/gas mark 4
2. Place the grated carrot sand salt into a pan over a medium heat. Cook until the liquid from the carrots evaporates from the pan
3. Pour the vegetable stock in and continue heating. Reduce until dry and then take the pan off the heat. Set aside
4. Add oil to a separate pan over a low-medium heat. When the oil is hot, add the onions to the pan and sweat until they have softened but not coloured
5. Mix the chopped onion into the carrot mixture along with the cheese, coriander and egg. Combine well and season with pepper to taste
6. Line a small, deep baking dish with parchment paper and place the mixture into the dish. Smooth over with a palette knife or the back of a spoon and place in the oven for 15 minutes
7. Take the dish out of the oven and leave to cool for 5 minutes before serving
