It’s really easy to make baked asparagus. The kids will enjoy preparing them and then get some of their 5 a day in the process.
Place the asparagus, tomatoes, pine nuts and a little garlic. In a baking tray and sprinkle with salt, pepper and lots of good quality Tuscan olive oil.
Bake 29 minutes in the oven at gas mark 4.
